Tom Collins

The Classic “Tom Collins”

 

A bit tart, a bit sweet and a bit fizzy.. What’s not to love?

 

45ml (1.5oz) 6 O’clock Gin London Dry
20ml (2/3oz) Lemon Juice
20ml (2/3oz) Simple Syrup
Soda water

Combine the gin, lemon juice and simple syrup in a tall glass and stir with plenty of ice until cold.
Top with soda water and garnish with a wedge of lemon.
For a fresh spring twist take a sprig of mint in the palm of your hand and clap firmly, before adding the mint to the glass.
