6 O’clock Gin Secco
Thyme, 6 O’clock gin, and our elderflower liqueur pair perfectly to gently enhance the flavours and bubbles of your favourite festive fizz for the perfect 6 O’clock Gin Secco cocktail. There’s no need to use fancy Champagne for this cocktail—any decent cremant, cava, or prosecco works perfectly.
Ingredients
For thyme syrup:
- 8oz sugar
- 1/2 pint water
- 2 tablespoons fresh lemon thyme leaves (or regular fresh thyme leaves)
For the cocktail:
- 25ml 6 O’clock gin
- 15ml Bramley and Gage Elderflower Liqueur
- 10ml thyme syrup
- 10ml fresh lemon juice
- 75ml chilled fizz
- Ice
- Thyme sprig, for garnish
Method
For the syrup:
- Bring sugar and water to a boil in a small saucepan, stirring until sugar dissolves.
- Remove from heat, add thyme leaves, cover and let stand 1 hour.
- Strain and refrigerate.
For the cocktail:
- Fill mixing glass with ice, add gin, Elderflower, thyme syrup, and lemon juice and stir until cold.
- Strain into flute, top with the fizz and garnish with thyme sprig.
