Summer Serves – Brunel & Ginger

For those who are lucky enough to have a bottle of Brunel Edition already, here’s a great serve idea. Fill a highball with plenty of ice, add 3/4 slices of fresh ginger (a potato peeler works really well), top with ginger ale and stir with one quarter of a lemongrass stalk (give it a bash to release the flavours!). The firery kick of the fresh ginger plays off beautifully with the warm, aromatic spice notes of Brunel Edition and the lemongrass gives a lovely fragrant nose to this summery drink.

6 O’clock Mint Choc Chip

Ingredients 50ml 6 O’clock Gin 25ml single cream 2 scoops mint ice cream Handful chocolate curls, grated chocolate or chocolate chips Mint leaves to garnish Method Blend the gin, cream and ice cream in an electric blender until well smooth. Serve in a coupe glass, garnish with fresh mint and chocolate curls.
